Well, we were told to be honest.. haha.. On a scale from 1 to 10 (1 being bad), I would give it a 2 or 3. It wasn't that great. It didn't have that much flavor. That means we are more than 1/4 of the way through our 60 day challenge. Am I stressed, nah, am I worried, maybe, anxiety, absolutely! <br />

I try not to stress about what my body is doing. I am doing my best and hopefully I get the best results.<br />

Worried, maybe. I did my order for yesterday, checking in at Genghis Grill, but forgot to upload the "proof" onto the site we have to log on. It was only 1 point, but I'm worried that 1 point might make or break me. What if someone loses the same % of weight as me and does ALL of the orders. I lost by that 1 POINT!! It's all good. If I'm meant to win, I'm gonna win!<br />
<br />
Anxiety, ABSOLUTELY!! I'm anxious to get to the end. I'm counting down the days, not because I'm tired of the food, but because I'm ready to see results. I'm ready to see if I win. I'm ready to get back to normal schedule.<br />

We stopped at Genghis Grill on our way out of town on Friday so that I could make sure to get it in. The contestants are allowed to miss 3 times during the 60 days and not be disqualified, so Saturday we didn't eat at GG (there wasn't one around). Friday night we had to get something for dinner. We asked the owner of the B&B where a good place to eat was and she said "Granny Clark's." Okay sweet. We WALKED, because she said it was only 3 blocks. Well, 1 mile later we got to Granny Clark's (btw, it was the ONLY place to eat in town). We walked in and the smell of FRIED FOOD hit you in the face like a frying pan. BLAH! So, we walked the <strike>3 blocks</strike> mile back to the B&B, got in the car and headed to Stephenville. Cotton Patch Cafe was the restaurant of choice. I was going to be good. I got the turkey melt. I WAS NOT going to get the french fries. I was going to the GOOD. Oh, but their mac and cheese is sooooo good. I should get their apples. Oh, but the Mac and Cheese!!! I went with the MAC AND CHEESE!! 156 calories for their mac and cheese and 517 for the Turkey Melt. Not too too bad. Well, then the devil was yelling in my ear from my right shoulder and I could no longer hear the angel on my left shoulder saying "You don't need dessert!" The devil won! Then came lunch. <span style="font-size: small;">The ONLY reason I'm telling on myself is because I have a point (will get to at end of blog). We went to Pizza Hut. I had 3 slices of pizza<span style="font-size: small;"> at 310 EACH! Oh, and I had a DP!! I hadn't had a Dr. Pepper in over a month and thought it was a good <span style="font-size: small;">idea. It wasn't and it cost me 200 calories!!! 8</span>30 calories for lunch! Blah! Okay so now we are <span style="font-size: small;">miserable</span></span></span></span>, sluggish, but<span style="font-size: small;">, hey, we did it to ourselves! We went and walked the <span style="font-size: small;">flea marke<span style="font-size: small;">t and tried to walk off some of the damage we had just done. Dinner was even worse. I don't know <span style="font-size: small;">WHAT we were thinking!! We went to Chilis. We were stupid bc they have a "light" menu!! Did we do that, NO! Here was the breakdown. We did the 2 for $35. We started out with cheese sticks! The cheese sticks were 94 calories EACH!<span style="font-size: small;"> We had 3 1/2 each. 329 for <span style="font-size: small;">appetizer</span>!!! Then I had the chicken fajitas.</span></span></span></span></span></span> 840 for fajitas (I thought I was doing good getting them!!)<span style="font-size: small;">. Then we did dessert! 1090 for the whole Chocolate Molten cake!!! Take on another 545 calories! You would think that 1714 for dinner would be enough, right? I was in Ecuador this summer. This picture shows my before, but it also helps with my top 3 reasons I want this.<br />
<br />
1: I want to be in the best shape possible so that it's not an excuse to go and tell people about Jesus. With being over weight, it's hard to climb mountains, deal with altitude, etc. <br />
<br />
2: I want to be a better parent for my children. I want to be able to go on school field trips and be the "class room mom" and not embarrass them.<br />
<br />
3: I want to do it for me. I want to be happy. I want to be good at something. I want to be the best me that I can be. In doing that, I can be the best Christian I can be, the best wife I can be, the best Mommy I need to be. <br />
<br />
HealthKwest has opened new doors for me. Genghis grill called me 2 weeks ago today and said <b>I </b>had been chosen to be a Genghis Grill Healthkwest contestant! Today, 2-14-2013, my quest is to write 5 reasons why I love Genghis Grill (and I do)!!!<br />
<br />
1: They have so many different combos. I can eat there for all 60 days and not have to have the same bowl twice!<br />
<br />
2: They cook it right there. It's fresh, hot, and oh so YUMMY!<br />
<br />
3: I do not have to ask for anything to be "left out" of my bowl. I make it how I want it. No onions, no broccoli, no peppers. I have it like I like it! <br />
<br />
4: My kids LOVE it and it's good for them. No stopping at Mc Donalds on the way to Genghis Grill because they won't eat it. They actually ask for "Genghis." **What kid does that!!**<br />
<br />
5: They have given me the opportunity to enter this contest and get my health on track. What a blessing. Oh, and the $10,000 is an added bonus. :)<br />

Greg and I started using the "My Fitness Pal" app on our phones. We have been logging EVERYTHING that we eat. I was given a stationary bike by a dear friend and then I bought a Gazelle off of Craigslist.<br />

I CANNOT keep clothes (and diaper) on this child when he sleeps! I am cleaning up pee in the morning and after nap. I put short on him, he gets out of them. Greg put tight sleeping pants on him last night and THIS is what I wake up to this morning!! He doesn't even undo the tabs of his diaper, he just pulls it down, so putting the diaper on backwards wouldn't work.. Any other thoughts?!?!?!<br />

Preheat oven to 350° F. <br />
In a large bowl, beat butter, pumpkin purée, egg and vanilla until
smooth. Add granulated sugar and brown sugar, beat until fluffy. <br />
Add dry ingredients – flour, nutmeg, cinnamon, ginger, ground clove, salt, baking soda and baking powder. Mix well.<br />
Coarsely chop walnut pieces. Fold in chopped walnuts and dried cranberries.<br />
Drop tablespoonfuls of dough onto cookie sheets greased with unsalted
butter, spacing about 1-inch apart. Bake for 15 minutes. Let cool and

Ingredients:<br /><br /> 1 (29 ounce) can pumpkin puree<br /> 3/4 cup apple juice<br /> 1/2 teaspoon ground ginger <br /> 1/2 teaspoon ground cloves<br /> 1 cup brown sugar<br /> 1 tablespoon ground cinnamon<br /> 1/2 teaspoon ground nutmeg<br /> 1 tsp fresh lemon juice<br /><br /><br /><br />Directions:<br /><br />1. Combine pumpkin, apple juice, spices, and sugar in a large saucepan and stir well. Bring mixture to a boil, covered with lid ajar (I prop it with a wooden spoon). Reduce heat to low-medium and simmer, covered with lid ajar, for 35-45 minutes, stirring frequently. Be careful as the mixture bubbles and pops!<br /><br />2. Remove from heat and let it sit for a few minutes before removing lid. Adjust spices to taste. Stir in lemon juice. Once cool, pumpkin butter can be kept in an airtight container in the fridge for up to 3 weeks. Makes enough to fill one large mason jar or about 3.5 cups.<br />

Last Wednesday (Oct 10), my mom came over and we had a "baking day." It was so fun and my house smelled heavenly with some fall scents. We made Pumpkin White Chocolate Cranberry Walnut cookies, Pumpkin Spiced Lattes, Pumpkin Butter, and Raspberry Dark Chocolate Banana Bread. The later of the 4 was my favorite and I'm feeling oh so generous, and guilty for not blogging in a while, so I thought I would share the recipe.. Beware, this could be addicting, just sayin!!<br />

Raspberry Dark Chocolate Banana Bread... (enjoy!)<br /> <br /> Ingredients:<br /> <br /> 2 cups all-purpose flour<br /> 3/4 teaspoon baking soda<br /> 1/2 teaspoon salt<br /> 1 cup granulated white sugar<br /> 4 tablespoons (1/2 stick) unsalted butter, at room temperature<br /> 2 large eggs<br /> 1 1/2 cups mashed ripe banana (about 3 bananas)<br /> 1/3 cup plain low fat yogurt<br /> 1 teaspoon vanilla extract<br /> 1 cup dark chocolate chunks or chips<br /> 1 cup halved raspberries, tossed in 1 tablespoon all-purpose flour<br /> Directions:<br /> <br /> 1. Preheat oven to 350°F. Spray a 9x5-inch loaf pan with cooking spray.<br /> 2. In a medium bowl, whisk together the flour, baking soda and salt.<br />
3. In a separate large bowl, beat the sugar and butter with an electric
mixer at medium speed until well blended (about 1 minute). Add the eggs
one at a time, beating well after each addition. Add the banana,
yogurt, and vanilla; beat until blended. Stir in the flour mixture; just
until moist. Don't over-mix. Stir in the chocolate chunks and then
gently stir in the raspberries. If you want, you can sprinkle a few
additional chocolate chunks and raspberries on the top to make it look
pretty.<br /> 4. Spoon the batter into the prepared pan. Bake for 50 to 60
minutes or until a wooden pick inserted in center comes out clean. Cool
15 minutes in the pan on a wire rack. Remove from pan and cool
completely on the wire rack.<br />

<b><span style="font-size: x-large;"><span style="font-size: large;">Banana Chocolate Chip Bundt Cake: </span></span></b></div>
<ul>
<li>3 cups all-purpose flour</li>
<li>2 teaspoons baking soda</li>
<li>1/2 teaspoon salt</li>
<li>2 sticks (8oz) unsalted butter, at room temperature</li>
<li>2 cups sugar</li>
<li>2 teaspoons pure vanilla extract</li>
<li>2 large eggs, preferably at room temperature</li>
<li>4 very ripe bananas, mashed (1 1/2-1 3/4 cups)</li>
<li>1 cup sour cream or plain yogurt</li>
<li>1/c mini chocolate chips </li>
</ul>
Preheat the oven to 350°F.<br />
Butter a Bundt pan.<br />
Whisk the flour, baking soda, and salt together.<br />
Beat the butter until
creamy. Add the sugar and beat at medium speed until pale and fluffy.
Beat in the vanilla, then add the eggs one at a time, beating for about 1
minute after each egg goes in. Reduce the mixer speed to low and mix in
the bananas. Finally, mix in half of the dry ingredients, all of the sour cream and then the
rest of the dry ingredients. Scrape the batter into the pan, hit the pan
on the counter to de-bubble the batter and smooth the top.<br />
Bake for 65-75 minutes, or until a thin knife inserted deep into the
center of the cake comes out clean. Transfer the cake to a rack to cool for 10 minutes before
unmolding onto the rack to cool completely.<br />

<span itemprop="recipeInstructions">Pour the chopped chocolate into a
medium mixing bowl, set aside. Pour the heavy cream into a microwave
safe measuring cup (Pyrex) and microwave on high for about 1 minute or
until bubbles begin to form on the surface. Pour the hot cream over the chocolate
and allow it to sit for about 3 minutes. Use a small whisk to combine
the mixture into a smooth chocolate glaze. Drizzle over cooled cake.</span><span itemprop="ingredients"> </span><br />
